Abstract

The aim of this study is to highlight the ancestral knowledge passed down from generation to generation in families dedicated to the production of artisanal bread. The emphasis is on the importance of this transmission, which is an essential part of Salta's culture. Additionally, similarities and differences in the use of machinery in the production and commercialization of products will be analyzed, including the integration of     Information and Communication Technologies (ICT). The commercial circuit surrounding the sale of these products will be explored, examining how it relates to the worldview in local festivities, which are key meeting points for artisanal commercialization. The durability and persistence of these practices in the studied families will be considered, as well as their efforts to find ways to survive and progress in line with the festive calendar. In this research, interviews will be used as the main method of information collection, following the idea proposed by Weima, G; Iño, Daza, regarding the integration of orality and historical memory in research processes.
